The following ingredients have 2 Servings
- For the pudding:
- ½ cup canned full-fat coconut milk
- ½ cup cashews, soaked
- 3 tablespoons maple syrup
- ½ banana
- 1 teaspoon vanilla extract
- ½ tablespoons ground flax seeds
- 1 teaspoon chia seeds
- ¼ teaspoon turmeric
- ¼ teaspoon salt
- To assemble:
- 16 vegan wafer cookies
- 1½ bananas, sliced
- 1 cup plain coconut yogurt
Instruction
- For the pudding, in a high-speed blender, add all ingredients and blend until smooth. Let sit 5 to 10 minutes, or until thickened.
- To assemble, into 2 serving glasses, layer cookies, pudding, banana slices, and yogurt. Let sit 10 to 15 minutes, or until cookies soften slightly, and then enjoy.
