Ingredients

The following ingredients have 2 Servings
  • For the pudding:
  • ½ cup canned full-fat coconut milk
  • ½ cup cashews, soaked
  • 3 tablespoons maple syrup
  • ½ banana
  • 1 teaspoon vanilla extract
  • ½ tablespoons ground flax seeds
  • 1 teaspoon chia seeds
  • ¼ teaspoon turmeric
  • ¼ teaspoon salt
  • To assemble:
  • 16 vegan wafer cookies
  • 1½ bananas, sliced
  • 1 cup plain coconut yogurt

Instruction

  • For the pudding, in a high-speed blender, add all ingredients and blend until smooth. Let sit 5 to 10 minutes, or until thickened.
  • To assemble, into 2 serving glasses, layer cookies, pudding, banana slices, and yogurt. Let sit 10 to 15 minutes, or until cookies soften slightly, and then enjoy.
