Ingredients
The following ingredients have 4 Servings
- 4 tablespoons unsalted butter
- 3-4 large boneless chicken breasts (cut into 1-inch pieces)
- 1 cup sweet chili sauce
- 4 tablespoons reduced sodium soy sauce
- 5 cloves garlic (minced)
- 2 tablespoons fish sauce
- 2 tablespoons freshly grated ginger
- 1-2 teaspoons Sriracha (to taste)
- juice of 2 limes
- 1 head of broccoli (cut into small florets)
- serve with rice
- 3-4 tablespoons chopped peanuts (optional)
Instruction
- In a large sauté pan add butter over medium-high heat and cook almost completely melted then add chicken. Cook chicken until it is a nice golden brown and cooked through the center. This takes about 8 minutes.
- NOTE: if you pan is too small for the amount of chicken and your pan is overcrowded, cook the chicken in two separate batches.
- Once chicken is completely cooked, place chicken on a large plate and set aside for later.
- In the large pan you were just using add all of the remaining ingredients and whisk to combine. Cook over medium heat until boiling.
- Once the sauce is boiling add the chicken, reduce heat to low and cook for 3 minutes allowing the sauce to glaze and cover all of the chicken pieces. Add broccoli pieces and cover and cook for another 3-5 minutes or until broccoli is slightly tender.
- Remove lid and serve chicken immediately over rice or rice noodles.
