Ingredients

The following ingredients have 4 Servings
  • 4 tablespoons unsalted butter
  • 3-4 large boneless chicken breasts (cut into 1-inch pieces)
  • 1 cup sweet chili sauce
  • 4 tablespoons reduced sodium soy sauce
  • 5 cloves garlic (minced)
  • 2 tablespoons fish sauce
  • 2 tablespoons freshly grated ginger
  • 1-2 teaspoons Sriracha (to taste)
  • juice of 2 limes
  • 1 head of broccoli (cut into small florets)
  • serve with rice
  • 3-4 tablespoons chopped peanuts (optional)

Instruction

  • In a large sauté pan add butter over medium-high heat and cook almost completely melted then add chicken. Cook chicken until it is a nice golden brown and cooked through the center. This takes about 8 minutes.
  • NOTE: if you pan is too small for the amount of chicken and your pan is overcrowded, cook the chicken in two separate batches.
  • Once chicken is completely cooked, place chicken on a large plate and set aside for later.
  • In the large pan you were just using add all of the remaining ingredients and whisk to combine. Cook over medium heat until boiling. 
  • Once the sauce is boiling add the chicken, reduce heat to low and cook for 3 minutes allowing the sauce to glaze and cover all of the chicken pieces. Add broccoli pieces and cover and cook for another 3-5 minutes or until broccoli is slightly tender.
  • Remove lid and serve chicken immediately over rice or rice noodles.
