Ingredients

The following ingredients have 9 Servings
  • 2 tablespoons olive oil
  • 1 medium yellow onion (chopped)
  • 1 medium green or red bell pepper (chopped)
  • 2 garlic cloves. minced
  • 2 pounds lean ground beef
  • 1/4 cup chili powder
  • 1 tablespoon ground cumin
  • 1 1/2 teaspoons kosher salt
  • 1 28- ounce can diced tomatoes
  • 2 8- ounce cans tomato sauce
  • 2 15- ounce cans kidney beans (drained and rinsed)
  • 1 15 ounce can pinto beans (drained and rinsed)
  • 1/4 cup coarsely chopped pickled jalapenos or green chilies (drained)

  • green onions
  • sour cream

Instruction

  • Add 2 tablespoons olive oil to a large skillet. Cook onions and peppers until softened.
  • Add the minced garlic. Cook for 1 minute. Add the ground beef to the skillet. Break up and cook stirringly occasionally until cooked through.
  • Transfer to a slow cooker. Add in all the remaining ingredients.
  • Serve in individual bowls topped with the cheese, green onions or chives, and sour cream.
