Ingredients
The following ingredients have 6 Servings
- 1 lb lean ground beef ((grass fed))
- 1 small onion (, chopped)
- 3-4 garlic cloves (, chopped)
- 1 1/2 tbsp chili powder
- 3 tsp cumin
- 3 cans diced tomatoes ((14.5 oz))
- 2 1/2 cups chicken stock
- 1 can kidney beans
- 1/2 cup uncooked quinoa
- salt and pepper to taste
Instruction
- Brown ground beef in a non stick skillet. Remove from pan.
- Add onions and garlic and cook for about 5 minutes until translucent.
- Add beef back to pan. Add remaining ingredients and stir.
- Bring to a boil. Reduce heat and simmer for 30 minutes.
