Ingredients

The following ingredients have 6 Servings
  • 1 lb lean ground beef ((grass fed))
  • 1 small onion (, chopped)
  • 3-4 garlic cloves (, chopped)
  • 1 1/2 tbsp chili powder
  • 3 tsp cumin
  • 3 cans diced tomatoes ((14.5 oz))
  • 2 1/2 cups chicken stock
  • 1 can kidney beans
  • 1/2 cup uncooked quinoa
  • salt and pepper to taste

Instruction

  • Brown ground beef in a non stick skillet. Remove from pan.
  • Add onions and garlic and cook for about 5 minutes until translucent.
  • Add beef back to pan. Add remaining ingredients and stir.
  • Bring to a boil. Reduce heat and simmer for 30 minutes.
