- 1 lb raw shrimp (peeled, deveined and tails removed, extra-large, 21/25 per lb. )

- 1 Tbsp lemon juice (fresh)
- 1/2 tsp kosher salt
- 1/2 tsp lemon pepper
- 1/4 cup pasteurized egg product (or one egg yolk)
- 1 clove garlic (minced)
- 1-1/2 tsp anchovy paste
- 1 tsp Dijon mustard
- 2 Tbsp lemon juice
- 3 Tbsp olive oil
- 1/4 cup grated Parmesan cheese
- 1/2 tsp Kosher salt
- 1/4 tsp ground black pepper
- 2 heads Romaine lettuce (rinsed, drained, torn or chopped)
- 2 cups croutons (homemade or purchased)
- 1/2 cup Parmesan cheese (grated or shaved)
