  • 1 lb raw shrimp (peeled, deveined and tails removed, extra-large, 21/25 per lb. )
  • 2 Tbsp olive oil
  • 1 Tbsp lemon juice (fresh)
  • 1/2 tsp kosher salt
  • 1/2 tsp lemon pepper
  • 1/4 cup pasteurized egg product (or one egg yolk)
  • 1 clove garlic (minced)
  • 1-1/2 tsp anchovy paste
  • 1 tsp Dijon mustard
  • 2 Tbsp lemon juice
  • 3 Tbsp olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp Kosher salt
  • 1/4 tsp ground black pepper
  • 2 heads Romaine lettuce (rinsed, drained, torn or chopped)
  • 2 cups croutons (homemade or purchased)
  • 1/2 cup Parmesan cheese (grated or shaved)
