Ingredients
The following ingredients have 4 Servings
- 2 pounds salmon (skin removed and cut into 2 inch squares)
- ¼ cup butter (melted)
- 1 12-14 oz. bottle Barbecue sauce
- 2 5 oz. bags barbecue flavor potato chips
Instruction
- Preheat oven to 450°.
- Line a 9×13 baking dish with foil. Pour one bag (5 oz) of crushed potato chips onto the foil.
- Combine the barbecue sauce and the melted butter (it’s okay if the butter isn’t all the way melted).
- Dip the salmon pieces in the barbecue sauce mixture. Place the salmon on the chips. Pieces will fit tightly next to each other. Cover with the remaining crushed chips.
- Cover the pan with foil and bake for 10 minutes. Uncover the pan and bake for additional 15-20 minutes, until the fish flakes with a fork.
- Let cool for a few minutes before serving.
