Ingredients

The following ingredients have 6 Servings
  • 16 ounces salmon (defrosted)
  • 1 T taco seasoning
  • 4-6 to tortillas
  • 1.5 cups red cabbage
  • 1.5 cups green cabbage or shredded lettuce
  • Cooking spray
  • 1 avocado
  • ½ cup plain greek yogurt (any fat %)
  • 1/8 tsp cayenne pepper
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • Juice from ½ lime
  • Salt and pepper

Instruction

  • Sprinkle salmon fillets with taco seasoning and pan fry on a nonstick pan until cooked all the way through (or use the George Foreman like I did). (Make sure to spray your pan thoroughly.)
  • Make cream sauce by combining ingredients by hand (mashing avocado to combine it) or in a blender.
  • Fill each taco with ¼ cup red cabbage, ¼ cup green cabbage or lettuce, 3 ounces of salmon and 1T of avocado sauce. Serve up!
