Ingredients
The following ingredients have 4 Servings
- 2-1/2 cups rotisserie chicken, chopped
- 1 cup finely diced rib celery
- 1/2 cup dried cranberries
- 1/2 cup mayonnaise
- 1/2 cup plain Greek yogurt
- 2 tablespoons sweet relish
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 12 pieces sandwich bread
- 6 lettuce leaves
Instruction
- Combine all ingredients in a medium mixing bowl, except bread and lettuce. Mix well.
- Chill the chicken salad in the refrigerator for at least 60 minutes to soften the cranberries.
- Serve on sandwich bread with lettuce.
- Store any leftover chicken salad in an airtight container in the refrigerator for 3-4 days.
