Ingredients

The following ingredients have 4 Servings
  • 2-1/2 cups rotisserie chicken, chopped
  • 1 cup finely diced rib celery
  • 1/2 cup dried cranberries
  • 1/2 cup mayonnaise
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons sweet relish
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 12 pieces sandwich bread
  • 6 lettuce leaves

Instruction

  • Combine all ingredients in a medium mixing bowl, except bread and lettuce. Mix well.
  • Chill the chicken salad in the refrigerator for at least 60 minutes to soften the cranberries.
  • Serve on sandwich bread with lettuce.
  • Store any leftover chicken salad in an airtight container in the refrigerator for 3-4 days.
