Ingredients
The following ingredients have 4 Servings
- 1 to 1 1/2 pounds tomatoes, cut into 1/2 inch pieces
- 2 tablespoons olive oil
- 2 to 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound pasta, like penne (whole wheat or traditional)
- 1 pound ground sausage (traditional, hot, Italian -- use what you like)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup fresh basil, chopped (or 1 tablespoon dried)
- Fresh parmesan
- Additional salt and pepper, to taste
Instruction
- Preheat the oven to 400 degrees F., and line a rimmed baking sheet with foil. Spread the chopped tomatoes on the foil, sprinkle on the minced garlic, drizzle with the olive oil, and then add the salt and pepper. Place the tomatoes in the hot oven, and roast for 15 to 20 minutes.
- While the tomatoes are cooking, cook your pasta al dente, according to package directions.
- In a large skillet, cook the sausage until it is no longer pink. When the pasta and tomatoes are both done, add them both to the skillet with the sausage. Add the olive oil, salt, pepper, and basil. Stir until well combined. Serve right away with grated fresh parmesan and more salt and pepper to taste.
