Ingredients
The following ingredients have 4 Servings
- 3 (5 ounce) cans tuna light
- 1/2 cup light mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- 1/4 cup red onion, diced
- 1/4 cup red pepper, chopped
- black pepper and salt to taste
- 4 slices Colby Jack cheese
- spinach leaves
- 2 bagels, sliced
Instruction
- Combine all ingredients except cheese and bagels.
- Stir well.
- Place each bagel half sliced side up on a baking sheet.
- Add spinach leaves on top of each bagel half followed by 1/3 cup of tuna mixture spread out evenly.
- Top each with 1 slice of cheese.
- Broil for about 3-4 minutes or until cheese is melted.
