Ingredients

The following ingredients have 4 Servings
  • 3 (5 ounce) cans tuna light
  • 1/2 cup light mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1/4 cup red onion, diced
  • 1/4 cup red pepper, chopped
  • black pepper and salt to taste
  • 4 slices Colby Jack cheese
  • spinach leaves
  • 2 bagels, sliced

Instruction

  • Combine all ingredients except cheese and bagels.
  • Stir well.
  • Place each bagel half sliced side up on a baking sheet.
  • Add spinach leaves on top of each bagel half followed by 1/3 cup of tuna mixture spread out evenly.
  • Top each with 1 slice of cheese.
  • Broil for about 3-4 minutes or until cheese is melted.
