Ingredients
The following ingredients have 4 Servings
- 1 lb lean ground beef
- 1 tablespoon minced fresh ginger
- 1 clove garlic, minced
- 1/3 cup Progresso™ bread crumbs
- 2 large eggs
- 2 tablespoons neutral oil
- 1 tablespoon red curry paste
- 1 tablespoon tomato sauce
- 1/2 cup beef stock
- 1 can (15 oz.) coconut milk
- Salt and pepper
- Fresh basil, garnish
Instruction
- In a medium bowl, add ground beef, ginger, garlic, eggs and breadcrumbs. Season with a pinch of salt and pepper and use your hands to gently mix meat mixture.
- When the mixture is completely mixed, make about 30 small, tablespoon-sized meatballs.
- In a large skillet over medium heat, drizzle in the neutral oil and add meatballs. Brown them well on all sides, cooking for 6-7 minutes.
- Remove meatballs from the skillet and add curry paste, tomato paste, and beef stock. Stir together and let cook for a minute. Then add coconut milk and bring to a simmer. Stir sauce and simmer for 3-4 minutes until it starts to thicken. Taste sauce and season with salt and pepper to taste.
- Add meatballs back to the sauce and simmer for 4-5 minutes. The sauce should be very thick.
- Serve meatballs with toothpicks or over rice. Garnish with fresh slivered basil.
