Ingredients
The following ingredients have 8 Servings
- 6 slices bacon
- 2 medium russet potatoes
- 12 large eggs
- 2 cups cheddar cheese ((shredded))
- ½ cup green onion ((chopped))
- ½ cup tomato ((diced))
- 1/8 tsp sea salt
- 1/8 tsp black pepper
Instruction
- Preheat oven to 375°F.
- Place the pan on the stove over medium heat.
- Chop the bacon and add it to the pan.
- While the bacon is frying, cut the potatoes into very thin slices.
- Once the bacon is crispy, remove it from the pan and set aside.
- Pour out any excess bacon grease that is present. A thin layer of grease should be left to prevent the potato crust from sticking, but you don’t need much.
- Place potato slices in the skillet to form a crust, like this:
- In a medium bowl, whisk the eggs together.
- Stir in the shredded cheese, green onion, tomato, salt, and pepper.
- Crumble the bacon and add it to the egg mixture, then carefully pour the mixture into the skillet over the potatoes.
- Place skilled in the preheated oven and bake for 20-25 minutes, or until set in the center.
