Ingredients

The following ingredients have 8 Servings
  • 6 slices bacon
  • 2 medium russet potatoes
  • 12 large eggs
  • 2 cups cheddar cheese ((shredded))
  • ½ cup green onion ((chopped))
  • ½ cup tomato ((diced))
  • 1/8 tsp sea salt
  • 1/8 tsp black pepper

Instruction

  • Preheat oven to 375°F.
  • Place the pan on the stove over medium heat.
  • Chop the bacon and add it to the pan.
  • While the bacon is frying, cut the potatoes into very thin slices.
  • Once the bacon is crispy, remove it from the pan and set aside. 
  • Pour out any excess bacon grease that is present. A thin layer of grease should be left to prevent the potato crust from sticking, but you don’t need much.
  • Place potato slices in the skillet to form a crust, like this:
  • In a medium bowl, whisk the eggs together.  
  • Stir in the shredded cheese, green onion, tomato, salt, and pepper.
  • Crumble the bacon and add it to the egg mixture, then carefully pour the mixture into the skillet over the potatoes.
  • Place skilled in the preheated oven and bake for 20-25 minutes, or until set in the center.
