Ingredients
The following ingredients have 4 Servings
- 1 pound boneless pork loin roast (cut into thin strips)
- 1 green bell pepper (cut into thin strips)
- 3/4 cup salsa
- 4 flour tortillas ((8-10 inches))
- 1 cup cheddar cheese (shredded)
- 1/2 cup sour cream (optional)
- 1/4 cup freshly chopped cilantro (optional)
Instruction
- Spray a nonstick skillet with cooking spray.
- Heat the skillet over medium-high heat.
- Add the pork and pepper strips.
- Cook for 3-4 minutes until pork is lightly browned.
- Add the salsa and heat through.
- Wrap the tortillas in paper towels and microwave on high for 30 seconds to warm them.
- Spoon the pork mixture into the warmed tortillas.
- Top with cheese, sour cream and fresh cilantro, if desired.
- Serve with additional salsa.
