The following ingredients have 4 Servings
  • 200 g (7 oz) fresh young ginger (See Note 1)
  • 2 tsp coarse sea salt (See Note 2)
  • boiling water, to cover the ginger
  • 1/4 cup (60 g) caster/superfine sugar
  • 1/2 cup (120 ml) rice wine vinegar (See Note 3)
  • 1/4 cup water (See Note 4)
