The following ingredients have 1 Servings
- 1 tortilla wrap
- 1/2 Tbsp red pesto
- handful grated cheese*
- 1/4 red or yellow pepper
- 1 spring onion
Instruction
- Prepare your fillings – grate the cheese, de-seed and chop the pepper, wash and chop the spring onions.
- Lay the tortilla wrap in a large frying pan. Spread the pesto over half of the tortilla, then sprinkle the grated cheese over the top of the pesto. Scatter over the chopped pepper and spring onion or fillings of your choice.
- Fold the tortilla in half to form a sandwich with the fillings in the middle.
- Dry-fry the tortilla for a couple of minutes until the base is golden. Once the base is cooked, carefully flip the quesadilla over in the pan to cook on the other side. Cook for a few minutes more until the cheese is melted and the quesadilla cooked through.
- Fold the tortilla in half again, then remove from the pan and serve warm or place on a cooling rack to cool completely, ready to be packed in a lunch box and eaten cold. Alternatively, rather than folding, you could also cut the tortilla into wedges to serve.
