The following ingredients have 6 Servings
- 2 lbs Large Raw Carrots
- 2 TB Olive Oil
- 2 TB Fresh Chopped Parsley
- 1 Tsp Dried Thyme
- 1/2 Tsp Salt
- 1/4 Tsp Black Pepper
Instruction
- Preheat the oven to 425°F.
- Wash and slice your whole carrots into 1/4th to 1/2-inch diagonal coins.
- Toss the sliced carrots together in a bowl with the olive oil and suggested seasonings.
- Spread the tossed carrots in a single layer on a parchment or Silpat-lined baking sheet.
- Bake the carrots for 15 minutes, toss them a bit, and bake for about 10 more minutes until the carrots are golden brown and tender.
- Serve carrots with additional chopped fresh parsley, if desired.
