Ingredients

The following ingredients have 6 Servings
  • 2 lbs Large Raw Carrots
  • 2 TB Olive Oil
  • 2 TB Fresh Chopped Parsley
  • 1 Tsp Dried Thyme
  • 1/2 Tsp Salt
  • 1/4 Tsp Black Pepper

Instruction

  • Preheat the oven to 425°F.
  • Wash and slice your whole carrots into 1/4th to 1/2-inch diagonal coins.
  • Toss the sliced carrots together in a bowl with the olive oil and suggested seasonings.
  • Spread the tossed carrots in a single layer on a parchment or Silpat-lined baking sheet.
  • Bake the carrots for 15 minutes, toss them a bit, and bake for about 10 more minutes until the carrots are golden brown and tender.
  • Serve carrots with additional chopped fresh parsley, if desired.
