Ingredients
The following ingredients have 4 Servings
- 8 slices of bacon (cut in half)
- 2 zucchini (cut into 8 pieces)
- 4-5 skinless boneless chicken thighs (fat removed, cut into 4 pieces)
- 2 tablespoons avocado oil (or olive oil)
- 4 tablespoons honey (melted)
- 2 tablespoons wholegrain mustard
- salt and pepper to taste
Instruction
- In a mixing bowl, combine 2 tablespoons of oil, 2 tablespoons of melted honey, 2 tablespoons of wholegrain mustard, salt, and pepper, to taste. Stir with a spoon, reserve 2 tablespoons for glazing.
- Add chicken thigh pieces, cover and marinate for 30 minutes.
- While chicken thighs are marinating, broil the oven on high heat, wrap each bacon slices around zucchini pieces.
- Thread chicken thigh piece on a skewer, alternating with zucchini pieces.
- Line a baking sheet with a parchment paper, then add chicken thigh skewers. Place it inside the oven on a higher rack. Broil for 5 minutes on one side, rotate and broil for another 5 minutes on the other side, repeat with other two sides, total cooking time should be 20 minutes or until bacon is cooked thru.
