Ingredients

The following ingredients have 6 Servings
  • 1 tbsp canola oil
  • 1 cup long grain white rice
  • 1/2 cup chopped onion
  • 2 cloves garlic (crushed)
  • 1 1/2 cups water
  • 1 chicken bouillon cube
  • 1 tomato (seeded and chopped (2 Roma tomatoes))
  • 1 jalapeno pepper (halved and seeded)
  • 1 tsp ground cumin
  • salt and pepper to taste
  • 1/2 cup cilantro (chopped )

Instruction

  • Heat oil in a medium saucepan.
  • Add rice to oil and cook for 3-5 minutes or just until rice begins to color.
  • Add chopped onion and continue cooking for another 1-2 minutes.
  • Add garlic and cook for an additional minute.
  • Dissolve bouillon cube in hot water.
  • Add to saucepan and bring to a boil.
  • Stir in tomato, jalapeno, cumin, salt and pepper.
  • Cover with lid and reduce heat to low. Cook for 20 minutes.
  • Remove from heat, fluff rice with a fork and stir in cilantro.
  • Remove jalapeno and garlic.
  • Serve immediately.
