Ingredients

The following ingredients have 4 Servings
  • 2 pieces, yellow mangoes, (right or nearly ripe, peeled and sliced into chunks)
  • 1 1/2 cups pineapple tidbits
  • 1/2 red bell pepper, (diced)
  • 2 plum tomatoes, (seeded and chopped)
  • 1 jalapeno pepper, (seeded and finely chopped)
  • 1/4 cup fresh cilantro, (minced)
  • 2 tbsp lime juice
  • 2 tbsp pineapple juice, (either fresh or canned)
  • 2 stalks green onions or scallions, (thinly sliced)
  • 1/2 teaspoon salt (or to taste)

Instruction

  • In a large bowl, combine all of the above ingredients. Cover and refrigerate for 1-2 hours to allow flavors to infuse. If you prefer a less chunky salsa, simply add the ingredients in a blender or food processor and pulse 1-2 times or to your desired texture and thickness. If you like it more as a fresh salad, leave it as is. Serve with tortilla chips or your favorite grilled meats!
