Ingredients

The following ingredients have 4 Servings
  • 1 pc fresh ginger (approx. 3 cm | 1inch; grated)
  • 1 clove garlic cloves (crushed)
  • 2 red chili peppers (deseeded and finely chopped)
  • 1 pinch ground cloves
  • 1 tsp ground Turmeric
  • 0.5 tsp ground cilantro
  • 0.667 cup Yogurt
  • 1 tsp Corn starch
  • 6.5 cups lamb (from the shoulder or the leg; diced)
  • 3 Tbsps vegetable oil
  • 2 onions (sliced)
  • 1 clove garlic cloves (chopped)
  • 2.667 cups Sweet potato (diced)
  • 1 cup lamb stock
  • salt
  • peppers
  • 2 Tbsps fresh cilantro

Instruction

  • Mix the marinade ingredients together, add the meat, cover and allow to marinate for approx 1 hour in the fridge.
  • Heat the oil in a pan and fry the diced garlic and onions. Then add the meat and the marinade along with the potatoes and the lamb stock.
  • Cover and simmer over a low heat for approx. 1 1/4 hours, adding a little water if necessary. Season with salt and ground black pepper and sprinkle with fresh coriander before serving.
  • Serve with a mixture of white and wild rice.
