Ingredients
The following ingredients have 4 Servings
- 1 pc fresh ginger (approx. 3 cm | 1inch; grated)
- 1 clove garlic cloves (crushed)
- 2 red chili peppers (deseeded and finely chopped)
- 1 pinch ground cloves
- 1 tsp ground Turmeric
- 0.5 tsp ground cilantro
- 0.667 cup Yogurt
- 1 tsp Corn starch
- 6.5 cups lamb (from the shoulder or the leg; diced)
- 3 Tbsps vegetable oil
- 2 onions (sliced)
- 1 clove garlic cloves (chopped)
- 2.667 cups Sweet potato (diced)
- 1 cup lamb stock
- salt
- peppers
- 2 Tbsps fresh cilantro
Instruction
- Mix the marinade ingredients together, add the meat, cover and allow to marinate for approx 1 hour in the fridge.
- Heat the oil in a pan and fry the diced garlic and onions. Then add the meat and the marinade along with the potatoes and the lamb stock.
- Cover and simmer over a low heat for approx. 1 1/4 hours, adding a little water if necessary. Season with salt and ground black pepper and sprinkle with fresh coriander before serving.
- Serve with a mixture of white and wild rice.
