Ingredients
The following ingredients have 4 Servings
- 4 cups cooked Rotini Pasta ((600 grams))
- 1 cup chopped pancetta ((150 grams))
- 25-30 grape / cherry tomatoes (halved)
- 1/2 teaspoon oregano
- 5-6 fresh basil leaves quartered
- salt and pepper to taste*
- 1/4 - 1/2 cup fresh Parmesan flakes
- 1 cup arugula (or more) ((20 grams))
- 3-4 tablespoons olive oil
Instruction
- Cook the Rotini pasta in boiling salted water until al dente, then drain and rinse in cold water.
- In a small frying pan fry the pancetta until golden.
- In a large bowl add the pasta, pancetta, tomatoes, oregano, basil, salt, pepper, parmesan flakes, arugula and olive oil, toss gently to combine. Enjoy!
