Ingredients

The following ingredients have 4 Servings
  • 4 cups cooked Rotini Pasta ((600 grams))
  • 1 cup chopped pancetta ((150 grams))
  • 25-30 grape / cherry tomatoes (halved)
  • 1/2 teaspoon oregano
  • 5-6 fresh basil leaves quartered
  • salt and pepper to taste*
  • 1/4 - 1/2 cup fresh Parmesan flakes
  • 1 cup arugula (or more) ((20 grams))
  • 3-4 tablespoons olive oil

Instruction

  • Cook the Rotini pasta in boiling salted water until al dente, then drain and rinse in cold water.
  • In a small frying pan fry the pancetta until golden.
  • In a large bowl add the pasta, pancetta, tomatoes, oregano, basil, salt, pepper, parmesan flakes, arugula and olive oil, toss gently to combine. Enjoy!
