Ingredients

The following ingredients have 6 Servings
  • 32 oz vegetable or chicken broth
  • 1 cup of chopped carrots
  • 1 onion (diced)
  • 1 large potato (cubed)
  • 3 cloves of garlic (minced)
  • 2 cups of frozen broccoli
  • 2 cups of frozen green beans
  • 1 can of garbanzo beans
  • 1 can of diced tomatoes
  • 3 cups of V8
  • 2 or 3 bay leaves
  • 1 tbsp Italian seasoning
  • 2 tbsp olive oil.

Instruction

  • In a large pot, cook carrots, onion, and garlic in oil for 5 minutes or until onion is tender.
  • Add the potatoes and cook for and addition 3-5 minutes.
  • Add broth, V8 juice, garbanzo beans, tomatoes, green beans, broccoli, Italian seasoning, and bay leaves. Bring to a boil.
  • Reduce heat; simmer, uncovered, for 15-20 minutes.
