Ingredients
The following ingredients have 4 Servings
- 1/2 Cup coconut oil
- 1/2 Cup maple syrup
- 2 Tsp. vanilla extract
- 1 Tsp. cinnamon
- 3 Cup old fashioned rolled oats (use certified gluten free oats for gluten free granola)
- 1 Cup pecans
- 1/2 Cup almonds
- 1/2 Cup coconut (shredded )
- 1/2 Cup coconut (flaked )
- 1/4 Cup pumpkin seeds
Instruction
- Pre-heat oven to 350 degrees F. Prepare a baking tray with parchment paper.
- Place melted coconut oil, maple syrup, vanilla extract and cinnamon in a large bowl. Whisk to combine.
- Add rolled oats and stir until oats are well coated.
- Add crushed pecan nuts, crushed almonds, shredded coconut, flaked coconut and pumpkin seeds. Stir to combine.
- Place granola in the prepared baking tray and extend it evenly.
- Bake it for 20 to 25 minutes or until granola is golden brown and crunchy.
- Store it in a jar with a lid for up to two weeks.
