Ingredients
The following ingredients have 8 Servings
- 1 1/2 lbs cherry tomatoes (or Roma tomatoes - ripe)
- 14.5 oz can petite diced tomatoes
- 3 green onions (ends trimmed and chopped into thirds)
- 1/2 red onion (chopped)
- 1 jalapeno pepper (seeds removed and roughly chopped)
- 1 red chili pepper (seeds removed and roughly chopped)
- 1/3 cup fresh cilantro
- 3 cloves garlic (roughly chopped)
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 1/2 teaspoon chili powder
- 1/4 teaspoon ground cumin
- Salt and pepper to taste
Instruction
- Add all the ingredients to a food processor and pulse in 1-second bursts until all ingredients are finely chopped, but still a bit chunky.
- Garnish with fresh chopped parsley and lime wedges on the side and serve with corn chips.
- Store in refrigerator in an airtight container for up to 1 week.
