Ingredients

The following ingredients have 8 Servings
  • 1 1/2 lbs cherry tomatoes (or Roma tomatoes - ripe)
  • 14.5 oz can petite diced tomatoes
  • 3 green onions (ends trimmed and chopped into thirds)
  • 1/2 red onion (chopped)
  • 1 jalapeno pepper (seeds removed and roughly chopped)
  • 1 red chili pepper (seeds removed and roughly chopped)
  • 1/3 cup fresh cilantro
  • 3 cloves garlic (roughly chopped)
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • Salt and pepper to taste

Instruction

  • Add all the ingredients to a food processor and pulse in 1-second bursts until all ingredients are finely chopped, but still a bit chunky.
  • Garnish with fresh chopped parsley and lime wedges on the side and serve with corn chips.
  • Store in refrigerator in an airtight container for up to 1 week.
