Ingredients
The following ingredients have 4 Servings
- 2 pounds potatoes ((yukon gold or red))
- 3 tablespoons olive oil
- 1 tablespoon lemon juice (, freshly squeezed)
- 2 teaspoons garlic powder
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- 1/4 cup shredded cheese (, parmesan or cheddar)
Instruction
- Preheat grill to medium-high heat. Scrub the potatoes clean and cut them into bite-sized chunks.
- Place the potatoes in a large bowl and drizzle them with olive oil.
- Add lemon juice, garlic powder, salt, pepper, thyme, rosemary and oregano and toss until potatoes are well coated.
- Using 4 large foil sheets, divide the potatoes into 4 and seal them up to create foil packets. Use 2 layers if needed.
- Place on grill and let cook for 20 minutes. Occasionally rotate within the grill in case there are hot spots.
- Carefully remove from grill onto a cooling sheet. Top with either sour cream or cheese.
