Ingredients
The following ingredients have 4 Servings
- 4 chicken breasts (cut into bite-size pieces)
- 3/4 cup of your favorite BBQ sauce
- 2 tablespoons olive oil
- 1 red pepper ( cut into bite-size pieces)
- 1 green pepper ( cut into bite-size pieces)
- 1 red onion ( cut into bite-size pieces)
Instruction
- Add the BBQ sauce and olive oil to a small bowl and mix together (or mix right in your measuring cup).
- Prep your chicken. Add it to a bowl or a large ZipLoc bag, along with 3/4 of the BBQ sauce and olive oil mixture. Reserve 1/4 of the BBQ sauce mixture for brushing on the skewers later. Let the chicken marinate in the fridge for at least 30 minutes, up to a few hours. If you're going to be using wooden skewers, be sure to soak them at least 30 minutes prior to grilling.
- Cut your veggies up. Assemble the skewers by alternating the chicken and veggies. I was able to make 8 skewers.
- Oil the grate of your grill and preheat it to high heat.
- Reduce heat to medium. Brush the top of the skewers with half the remaining sauce and grill each skewer for 5-6 minutes. Turn the skewers over, brush them with the rest of the sauce, and then grill for another 5-6 minutes. I did 12 minutes total on our gas BBQ with the lid down.
