Ingredients
The following ingredients have 4 Servings
- 1 pound boneless chicken breast
- 2 Tablespoons Buffalo wing sauce
- 4 large red lettuce leaves, washed and dried
- 2 medium carrots,peeled and diced
- 2 stalks celery, diced
- 4 teaspoons light Ranch dressing
- 2 teaspoons crumbled blue cheese
- salt and pepper, to taste
Instruction
- Pre-heat grill to medium. If using the Smokin'O's, place the wood on the grill and heat to 400 degrees.
- Pound the chicken breasts to 1/2 inch. Rub the wing sauce over the chicken breast. Season to taste with black pepper
- Cook the chicken breasts over medium heat. ( if using the Smokin'O's, drop grill temperature to medium and move the wood chip to indirect heat. Cook the chicken about 6 minutes a side. The internal temperature should be 165 degrees. Remove from the grill and set aside.
- Cut the chicken breasts to 1/2 inch pieces.
- Top the lettuce leaves with the chicken pieces. Distribute the celery and carrots to each lettuce wrap. Top each with a teaspoon of light Ranch dressing and 1/2 teaspoon of crumbled blue cheese
