Ingredients
The following ingredients have 4 Servings
- 3 cups oats
- 1 tablespoon cinnamon
- 1/4 cup brown sugar
- 1/4 cup honey
- 1/4 tablespoon canola oil
- 1 teaspoon vanilla extract
- 1 cup fruit (strawberries, blueberries, raspberries, etc)
- Greek yogurt (strawberry flavor)
- 2 tablespoons chia seeds
- 1/4 cup walnuts (chopped)
Instruction
- Preheat oven to 300ºF. Spray a muffin tin with non-stick cooking spray.
- In a bowl combine oats, cinnamon and brown sugar.
- Heat honey and canola oil in microwave for 30 seconds on high in a microwave safe bowl.
- Stir honey, canola oil and vanilla into oats mixture.
- Add about 2 tablespoons of granola mix into each muffin cup, pushing granola around the bottom and sides of each muffin cup.
- Bake for 20-25 minutes or until granola is lightly brown.
- Let granola cups completely cool then fill each with Greek yogurt and top with your favorite fruit toppings, chia seeds and walnuts.
