Ingredients

The following ingredients have 7 Servings
  • 4 cups lentils (rinsed and picked through)
  • 32 oz beef broth (or veggie broth to make vegetarian)
  • 2 cups water
  • 1 medium yellow onion (diced)
  • 2 cups carrots (sliced)
  • 1/2 cup celery (sliced)
  • 28 oz can diced tomatoes (undrained)
  • 1 large russet potato (diced)
  • 4-6 cloves garlic (minced)
  • 2-3 bay leaves (optional)
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instruction

  • Place all ingredients in a 5-6 quart crockpot. Cook on LOW for 7-8 hours or until vegetables are tender.  Enjoy!
