Ingredients
The following ingredients have 7 Servings
- 4 cups lentils (rinsed and picked through)
- 32 oz beef broth (or veggie broth to make vegetarian)
- 2 cups water
- 1 medium yellow onion (diced)
- 2 cups carrots (sliced)
- 1/2 cup celery (sliced)
- 28 oz can diced tomatoes (undrained)
- 1 large russet potato (diced)
- 4-6 cloves garlic (minced)
- 2-3 bay leaves (optional)
- 1/2 tsp salt
- 1/2 tsp black pepper
Instruction
- Place all ingredients in a 5-6 quart crockpot. Cook on LOW for 7-8 hours or until vegetables are tender. Enjoy!
