The following ingredients have 8 Servings

  • 1 quart low-sodium chicken or vegetable stock
  • 29 oz fire-roasted diced tomatoes with juice (2-14.5 oz cans)
  • 2 Tbsp tomato paste
  • 10 oz diced tomatoes and green chilies with juice (can)
  • 2 tsp ground cumin
  • 1 tsp kosher salt
  • 1 tsp chili powder
  • 1/8 tsp ground red pepper
  • 1/8 tsp ground black pepper
  • 4 small corn tortillas
  • 1 Tbsp vegetable oil
  • avocado chunks, sour cream, cilantro, lime wedges
