Ingredients

The following ingredients have 7 Servings
  • 2 cups cauliflower florets
  • 4 cups broccoli florets
  • 3 cups vegetable broth
  • 3 garlic cloves, minced
  • 4-5 sprigs of fresh thyme
  • salt & pepper to season
  • 1 cup 2% milk
  • 8 oz. shredded cheddar cheese

Instruction

  • To a crock pot, add cauliflower, broccoli, garlic cloves, fresh thyme, salt, pepper and vegetable broth. Stir to mix everything together.
  • Cover and cook on HIGH for 2-3 hours.
  • Add half of the mixture to a blender along with milk and puree until smooth. Pour the blended soup back into the crock pot with remaining mixture and add in the cheese. Using a wooden spoon, stir until the cheese is melted.
  • Serve. (optional: garnish with a little cheese and chopped green onions)
