Ingredients
The following ingredients have 4 Servings
- 1 roast (about 3 lbs is what I used)
- 1 green bell pepper sliced (or more if you want)
- 1 onion sliced thick (we slice them thick so the kids can pick them out easily if they want!)
- 1 can of diced tomatoes with green chilies (rotel)
- 1 cup red wine vinegar
- 1 cup water
- 1 teaspoon minced garlic
- 1 Teaspoon cumin
- 1 teaspoon salt
- 1 teaspoon pepper
Instruction
- Place the roast in the crockpot.
- Add everything else on top.
- Cook on low in your crockpot for about 6 to 8 hours.
- Shred the beef with 2 forks and stir. Let the flavors combine for about 30 more minutes in the crockpot before you serve.
- Serve with tortillas or on rice!
