Ingredients

The following ingredients have 4 Servings
  • 1 roast (about 3 lbs is what I used)
  • 1 green bell pepper sliced (or more if you want)
  • 1 onion sliced thick (we slice them thick so the kids can pick them out easily if they want!)
  • 1 can of diced tomatoes with green chilies (rotel)
  • 1 cup red wine vinegar
  • 1 cup water
  • 1 teaspoon minced garlic
  • 1 Teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instruction

  • Place the roast in the crockpot.
  • Add everything else on top.
  • Cook on low in your crockpot for about 6 to 8 hours.
  • Shred the beef with 2 forks and stir. Let the flavors combine for about 30 more minutes in the crockpot before you serve.
  • Serve with tortillas or on rice!
