Ingredients

The following ingredients have 4 Servings
  • 30 ounces Mexi-corn (drained)
  • 20 ounces Rotel Tomatoes with green chilies (drained)
  • 1 1/2 cup Greek yogurt
  • 1/2 cup mayonnaise
  • 1 1/2 cup shredded cheddar cheese
  • 1 ounce Ranch dressing mix ((dry mix))
  • 1 bunch green onions (chopped)
  • salt and pepper (to taste)

Instruction

  • Combine all ingredients and stir gently in a large bowl until combined.  Reserve a little bit of cheese and green onions for garnish.
  • Refrigerate dip until ready to serve.*
  • Garnish with reserved cheddar cheese and green onions before serving.
  • Serve with corn tortilla chips.
