Ingredients

The following ingredients have 4 Servings
  • 1 (6 oz) pack cherry flavored gelatin mix,
  • 2 cups boiling water
  • 1 can (20 oz) crushed pineapple, (undrained)
  • 1 3/4 cups homemade cranberry sauce or 1 can (14 ounces) whole-berry cranberry sauce
  • 2 cups seedless red grapes, (halved)
  • ⅓ cup pecans, (chopped)
  • heavy cream, (freshly whipped (optional))

Instruction

  • In a large bowl, dissolve the gelatin mix in water. Stir in the crushed pineapple and cranberry sauce (homemade or canned). Allow to set and chill in the fridge for 30 minutes.
  • Take out of the refrigerator. Stir in grapes and pecans. Pour into a 2-qt. serving bowl or a 9x13 baking dish. Refrigerate overnight or until firm. Can be made a day or 2 ahead.
  • Serve with some freshly whipped cream on the side. The latter is optional but oh so delicious with it, especially if you wish to consider this salad as a dessert rather than a side.
