Ingredients

The following ingredients have 4 Servings
  • 240 g Courgette (zucchini) (grated)
  • 2 Eggs
  • 65 g plain flour
  • 1 tsp Baking powder
  • 1 pinch Sea salt and black pepper
  • 40 g Feta
  • 2 tbsp Fresh mint (chopped)
  • 60 g frozen peas (thawed)
  • 0.5 tbsp Olive oil
  • Tzatziki ( for serving)

Instruction

  • Grate the courgette and then squeeze out the excess liquid and discard. Set the grated courgette aside.
  • In a large bowl, whisk the eggs and then add the flour and baking powder and season.
  • Add the courgette, peas, feta and mint and gently mix it in to form a batter.
  • Heat some oil in a pan and then add spoonfuls of batter to make fritters around 10cm (4 inch) in diameter. Fry for 2 minutes each side.
  • Serve with tzatziki.
