Ingredients
The following ingredients have 4 Servings
- 240 g Courgette (zucchini) (grated)
- 2 Eggs
- 65 g plain flour
- 1 tsp Baking powder
- 1 pinch Sea salt and black pepper
- 40 g Feta
- 2 tbsp Fresh mint (chopped)
- 60 g frozen peas (thawed)
- 0.5 tbsp Olive oil
- Tzatziki ( for serving)
Instruction
- Grate the courgette and then squeeze out the excess liquid and discard. Set the grated courgette aside.
- In a large bowl, whisk the eggs and then add the flour and baking powder and season.
- Add the courgette, peas, feta and mint and gently mix it in to form a batter.
- Heat some oil in a pan and then add spoonfuls of batter to make fritters around 10cm (4 inch) in diameter. Fry for 2 minutes each side.
- Serve with tzatziki.
