Ingredients
The following ingredients have 4 Servings
- 2 cups frozen corn thawed
- 1/2 cup all-purpose flour
- 2 egg
- 3 tablespoons chopped parsley
- 1 green onion chopped
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon salt
- 1/4 teaspoon ground pepper
- 1/4 cup heavy whipping cream
- Vegetable or canola oil for frying
- sour cream for garnish
Instruction
- In a large mixing bowl, stir together the corn, flour, salt, chopped parsley, pepper, and cayenne.
- Add the eggs and heavy whipping cream and stir until well incorporated.
- Heat oil over medium heat in a pan. Spoon 2-3 tablespoons of the corn mixture onto the hot oil. Cook 3-4 minutes or until golden, flip and cook an additional 3-4 minutes.
- Serve warm with sour cream and chopped scallions
- Serve & enjoy!
