Ingredients

The following ingredients have 4 Servings
  • 2 cups frozen corn thawed
  • 1/2 cup all-purpose flour
  • 2 egg
  • 3 tablespoons chopped parsley
  • 1 green onion chopped
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1/4 cup heavy whipping cream
  • Vegetable or canola oil for frying
  • sour cream for garnish

Instruction

  • In a large mixing bowl, stir together the corn, flour, salt, chopped parsley, pepper, and cayenne.
  • Add the eggs and heavy whipping cream and stir until well incorporated.
  • Heat oil over medium heat in a pan. Spoon 2-3 tablespoons of the corn mixture onto the hot oil. Cook 3-4 minutes or until golden, flip and cook an additional 3-4 minutes.
  • Serve warm with sour cream and chopped scallions
