Ingredients

The following ingredients have 6 Servings
  • 2 tablespoons grapeseed or canola oil
  • 2 tablespoons butter
  • 1 medium onion (chopped)
  • 2-3 cups butternut squash (peeled, seeded and cut into 1" cubes)
  • 3-4 cups fresh Brussels sprouts (trimmed and halved or quartered)
  • 1/8 teaspoon freshly grated nutmeg (or a slightly less amount of ground nutmeg)
  • ½ cup orange juice
  • 1½ cup fresh cranberries
  • 2 tablespoons honey
  • 2 teaspoons kosher salt
  • ½ teaspoon ground black pepper

Instruction

  • In a very large skillet, heat the oil and butter over medium/high heat.
  • Add the onion, butternut squash, and Brussels sprouts.
  • Cook and stir occasionally for approximately 7-10 minutes.
  • Add the nutmeg, salt, and pepper.
  • Stir in the orange juice, cranberries, and honey.
  • Reduce the heat to medium and cook, stirring occasionally, for an additional 3-5- minutes.
  • Serve immediately.
