Ingredients
The following ingredients have 6 Servings
- 2 tablespoons grapeseed or canola oil
- 2 tablespoons butter
- 1 medium onion (chopped)
- 2-3 cups butternut squash (peeled, seeded and cut into 1" cubes)
- 3-4 cups fresh Brussels sprouts (trimmed and halved or quartered)
- 1/8 teaspoon freshly grated nutmeg (or a slightly less amount of ground nutmeg)
- ½ cup orange juice
- 1½ cup fresh cranberries
- 2 tablespoons honey
- 2 teaspoons kosher salt
- ½ teaspoon ground black pepper
Instruction
- In a very large skillet, heat the oil and butter over medium/high heat.
- Add the onion, butternut squash, and Brussels sprouts.
- Cook and stir occasionally for approximately 7-10 minutes.
- Add the nutmeg, salt, and pepper.
- Stir in the orange juice, cranberries, and honey.
- Reduce the heat to medium and cook, stirring occasionally, for an additional 3-5- minutes.
- Serve immediately.
