Ingredients

The following ingredients have 4 Servings
  • 1 large English cucumber, (diced)
  • 1 large avocado, (diced)
  • 1 bell pepper, (orange or yellow)
  • 1 Serrano chile, (seeded & diced)
  • 4 green onion, (finely chopped)
  • 2 limes, (juiced)
  • 5-6 cloves garlic, (minced)
  • 1 cup vegetable stock
  • 2 cups tomato juice
  • ¼ cup white wine vinegar
  • 1 tsp sea salt
  • 1 Tbsp avocado oil

Instruction

  • Prepare cucumber, avocado, peppers, green onions, and cilantro. Add to a large bowl and combine well.
  • Add lime juice, garlic, vegetable broth, tomato juice, vinegar, avocado oil, and sea salt. Combine all ingredients well.
  • Taste and adjust salt and pepper, then add more lime if desired.
  • Chill for 1 hour prior to serving. Add extra salt of pepper if desired. Top with chopped cilantro and more green onions.
