Ingredients
The following ingredients have 6 Servings
- 1 lb. extra lean ground beef
- 1 large onion (chopped)
- 2 tsp. fresh minced garlic
- 1 small red pepper (diced)
- 1-15 oz. can red kidney beans (rinsed and drained)
- 1- 8 oz. can tomato sauce
- 2 medium ripe tomatoes
- 1/2 cup elbow macaroni
- 1/2 cup water
- 1 Tbsp. chili powder
- 1 tsp. cumin
- 1 tsp. dried cilantro
- 1 tsp. salt
- Freshly ground pepper to taste
- 1 cup Mexican blend cheese (grated)
Instruction
- In a large skillet or saute pan cook the beef until starting to brown, add in the onions, pepper and garlic and cook until translucent.
- Add in the kidney beans, tomato sauce, tomatoes, macaroni, water, chili powder, cumin, cilantro, salt and pepper. Bring to a boil, cover, reduce to simmer and cook for 20 min. Top with the cheese and cover again for 2-3 min. until melted.
