Ingredients
The following ingredients have 4 Servings
- 6 chicken thighs
- 2 tbs tomato paste
- 4 bacon rashers diced
- 2 tbs plain flour
- 1 pinch salt *to taste
- 1 pinch pepper *to taste
- 1/2 tsp parsley *to taste
- 1/2 tsp oregano *to taste
- 1/2 tsp garlic powder *to taste
- 1/2 tsp onion powder *to taste
- 1 red capsicum medium
- 1 onion chopped large
- 2 cups Massel Chicken Style Liquid Stock
- 500 g mushrooms sliced
- 3 carrots finely chopped
Instruction
- Preheat oven to 160C.
- Fry onion and bacon in a large frying pan. Add mushrooms and cook gently. Remove from pan.
- Brown chicken, which has been coated in flour.
- Add all remianing ingredients to a large casserole dish, cover and cook for 2½ hours.
- After cooking for 2 hours, remove the lid for the last half an hour of cooking.
