Ingredients

The following ingredients have 4 Servings
  • 6 chicken thighs
  • 2 tbs tomato paste
  • 4 bacon rashers diced
  • 2 tbs plain flour
  • 1 pinch salt *to taste
  • 1 pinch pepper *to taste
  • 1/2 tsp parsley *to taste
  • 1/2 tsp oregano *to taste
  • 1/2 tsp garlic powder *to taste
  • 1/2 tsp onion powder *to taste
  • 1 red capsicum medium
  • 1 onion chopped large
  • 2 cups Massel Chicken Style Liquid Stock
  • 500 g mushrooms sliced
  • 3 carrots finely chopped

Instruction

  • Preheat oven to 160C.
  • Fry onion and bacon in a large frying pan. Add mushrooms and cook gently. Remove from pan.
  • Brown chicken, which has been coated in flour.
  • Add all remianing ingredients to a large casserole dish, cover and cook for 2½ hours.
  • After cooking for 2 hours, remove the lid for the last half an hour of cooking.
