  • 1 cup oil for frying
  • 1 medium Onion, sliced very thin
  • 1.5 lbs boneless skinless chicken thighs, cut into chunks (680g)

  • 1 tsp turmeric
  • 1/2 tsp mild chili powder

  • 1 pinch saffron threads
  • 3 tbsp coconut oil
  • 1/2 small onion, finely sliced
  • 1.5 cup basmati rice (290g)
  • 4 green cardamom pods
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 2 jalapeno peppers, seeded, sliced in half (or serrano peppers if you want a little more heat)

  • 1 3 inch cinnamon stick
