Ingredients
The following ingredients have 4 Servings
- 4 chicken breasts that are on the thinner side
- 1 cup Italian bread crumbs (you may also use Italian panko crumbs for a crispier texture)
- 1 cup grated Parmesan cheese
- 1/2 stick melted butter
- 1/2 cup olive oil
- 8-10 cloves of minced garlic
- garlic salt (to taste)
- 1 cup of shredded cheese (or more to taste. Any kind will do. My favorite is colby jack.)
- diced green onions to garnish (you can also add chopped cooked bacon if you like)
Instruction
- Pour the melted butter into a good bit of minced garlic. I use about 8 large cloves. Pour in the olive oil. Microwave the mixture for 1 minute. Remove, and give it a quick stir with a fork. Microwave for another 30 seconds. This gets all that good garlic flavor infused with the butter & olive oil.
- Mix together equal parts of Parmesan Cheese & Italian Bread Crumbs. Dip the chicken breasts in the garlic mixture, coating both sides thoroughly making sure to get a good bit of the minced garlic on each piece. Sprinkle with a little garlic salt & then dip into the dry mix, coating all sides well.
- Place the chicken breasts into a baking dish. Bake in an oven preheated to 375 degrees for 35 minutes. Sprinkle a good bit of cheese on top of each chicken breast & then pop it back into the oven for just a couple minutes to melt the cheese on top. Garnish with diced green onions - you can also add chopped cooked bacon if you like.
