Ingredients

The following ingredients have 3 Servings
  • 8 large Celery stalks ( chopped into slices diagonally)
  • ½ cup Cranberries
  • 1 cup Nuts (pecans, walnuts, almond, )
  • ¼ cup Fresh parsley (chopped (optional))
  • 3 tbsp Lemon juice
  • 4 tbsp Olive oil
  • 1 tbsp Honey
  • 1/4 tsp Kosher salt
  • 1/4 tsp Black pepper
  • ½ cup Parmesan cheese (shaved or )
  • ½ cup Feta cheese (chopped )

Instruction

  • Prep - slice the celery into thin slices diagonally. Soak cranberries in hot water for 5 minutes and drain well. Chop pecans and walnuts into small pieces
  • Dressing - In a small bowl combine the olive oil, lemon juice, honey, salt, and black pepper. Combine well with a whisk.
  • Salad - In a large bowl, combine celery, cranberries, nuts, and herbs. Pour the salad dressing and toss everything well to combine. Taste and adjust seasoning.
