Ingredients

The following ingredients have 7 Servings
  • 6 vine ripened tomatoes (or 2 cups of grape tomatoes)
  • Bocconcini cheese (we use one of the large balls)
  • large handfuls of fresh basil leaves
  • 1 to 2 tablespoons balsamic vinegar or a balsamic vinegar reduction
  • 1 to 2 tablespoons extra virgin olive oil
  • salt and fresh ground black pepper

Instruction

  • Slice tomatoes and bocconcini cheese. Or we like to tear up the cheese instead – it’s a really nice texture when you eat it like this.
  • On a serving platter, layer slices of tomatoes, bocconcini cheese and basil leaves.
  • Drizzle with olive oil and balsamic vinegar, or a balsamic vinegar reduction.
  • Salt and pepper to taste.
