Ingredients
The following ingredients have 7 Servings
- 6 vine ripened tomatoes (or 2 cups of grape tomatoes)
- Bocconcini cheese (we use one of the large balls)
- large handfuls of fresh basil leaves
- 1 to 2 tablespoons balsamic vinegar or a balsamic vinegar reduction
- 1 to 2 tablespoons extra virgin olive oil
- salt and fresh ground black pepper
Instruction
- Slice tomatoes and bocconcini cheese. Or we like to tear up the cheese instead – it’s a really nice texture when you eat it like this.
- On a serving platter, layer slices of tomatoes, bocconcini cheese and basil leaves.
- Drizzle with olive oil and balsamic vinegar, or a balsamic vinegar reduction.
- Salt and pepper to taste.
