Ingredients
The following ingredients have 4 Servings
- 2 tomatoes (medium) (trimmed and sliced)
- 120 g fresh mozzarella (drained and thinly sliced)
- 3-4 large fresh basil leaves
- 1 TB olive oil
- sea salt flakes
- freshly ground black pepper
Instruction
- This lovely salad could not be simpler! Remove the mozzarella ball from the packaging and drain well on kitchen paper.
- Slice the tomatoes thinly and lay out on your serving platter. Count the spaces in between the tomatoes and slice your mozzarella ball into pieces that can slide in between the tomatoes. I find the slicing the ball at a slight angle ensures that one fresh mozzarella ball (120g / 4.2oz) will yield at least 9 slices.
- Season with sea salt flakes and freshly ground black pepper. (You wrap the salad in sling film up until this point if you want to make it ahead of time.)
- Just before serving, drizzle over the olive oil and scatter with fresh basil (which should be sliced and scattered just before serving). You could tuck smaller basil leaves in between the slices, but I found this much easier and prettier.
