Ingredients

The following ingredients have 4 Servings
  • 4 Mini Naan Bread (If you can't find mini naan, use 2 larger size)
  • 4 Eggs
  • 1 tablespoon olive oil
  • 1 cup grated gruyere cheese (you can sub any kind of grated soft cheese)
  • 1 cup baby spinach leaves
  • 1 cup sliced small tomatoes
  • 1/2 cup sliced green onion

Instruction

  • Preheat oven to 450 degrees.
  • Place naan bread on large baking sheet and brush with olive oil
  • Top each crust with 1/4 cup cheese (building the cheese around the edges and leaving an indent for the egg). 1/3 cup spinach, 1/4 cup sliced tomato and 1/8 cup sliced green onion.
  • Crack one egg into small bowl, one at a time. Gently pour egg onto center of crust.   
  • Carefully place sheet pan in oven and bake for 10 minutes.  Check to see that the whites of the egg are fully cooked but the center of the yolk remains soft.  Adjust cooking time accordingly.
  • Sprinkle with salt and pepper and serve hot!
  • Great served with fresh fruit and mimosas!
