Ingredients

The following ingredients have 4 Servings
  • ⅓ cup red wine vinegar
  • ⅓ cup olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1½ tsp garlic (minced)
  • 3 14.5-oz. cans black beans, drained and rinsed
  • 1 14-oz. can yellow corn, drained (see note)
  • 1 red bell pepper (diced)
  • 1 green bell pepper (diced)
  • 1 medium red onion (diced)
  • juice of 1 lime
  • {optional} fresh cilantro (chopped)

Instruction

  • Using a small mixing bowl whisk together vinegar, oil, salt, pepper and garlic; set aside.
  • Using a large mixing bowl, add black beans, corn, bell peppers and onion. Add olive oil mixture and toss until well combined. Cover and refrigerate overnight.
  • Prior to serving, squeeze a fresh lime on top of salad and {optional} garnish with freshly chopped cilantro.
