Ingredients
The following ingredients have 4 Servings
- ⅓ cup red wine vinegar
- ⅓ cup olive oil
- 1 tsp salt
- ½ tsp pepper
- 1½ tsp garlic (minced)
- 3 14.5-oz. cans black beans, drained and rinsed
- 1 14-oz. can yellow corn, drained (see note)
- 1 red bell pepper (diced)
- 1 green bell pepper (diced)
- 1 medium red onion (diced)
- juice of 1 lime
- {optional} fresh cilantro (chopped)
Instruction
- Using a small mixing bowl whisk together vinegar, oil, salt, pepper and garlic; set aside.
- Using a large mixing bowl, add black beans, corn, bell peppers and onion. Add olive oil mixture and toss until well combined. Cover and refrigerate overnight.
- Prior to serving, squeeze a fresh lime on top of salad and {optional} garnish with freshly chopped cilantro.
