Ingredients

The following ingredients have 6 Servings
  • 1 ¼ cups enchilada sauce
  • 2 cups vegetable broth
  • 14 ounce can black beans (rinsed and drained)
  • 14 ounce can crushed tomatoes
  • 2 cups frozen corn
  • 4 ounce can mild diced green chiles
  • ½ cup shredded carrots
  • 1 garlic clove (finely chopped)
  • ½ teaspoon salt

Instruction

  • Add all the ingredients to a large pot stir to combine. Bring the soup to a boil, and turn heat down to simmer for 20 minutes.
  • Serve hot with your choice of garnishes, like sour cream, cilantro, guacamole, tortilla strips, shredded cheese, or avocado.
