Ingredients
The following ingredients have 6 Servings
- 1 ¼ cups enchilada sauce
- 2 cups vegetable broth
- 14 ounce can black beans (rinsed and drained)
- 14 ounce can crushed tomatoes
- 2 cups frozen corn
- 4 ounce can mild diced green chiles
- ½ cup shredded carrots
- 1 garlic clove (finely chopped)
- ½ teaspoon salt
Instruction
- Add all the ingredients to a large pot stir to combine. Bring the soup to a boil, and turn heat down to simmer for 20 minutes.
- Serve hot with your choice of garnishes, like sour cream, cilantro, guacamole, tortilla strips, shredded cheese, or avocado.
