Ingredients
The following ingredients have 4 Servings
- 3 Granny Smith apples (peeled, cored and diced (2½-3 cups when diced))
- 1 ½ cups all purpose flour
- ¼ cup white cane sugar
- 2 teaspoons baking powder
- 1 tablespoon cinnamon powder
- ¼ teaspoon kosher salt
- ½ cup milk
- 2 eggs (room temperature)
- Oil for frying
- 1 cup confectioners sugar
- 2-3 tablespoons milk
- 1 teaspoon vanilla extract
- 1 cup cane sugar
- 3 tablespoon cinnamon powder
Instruction
- In a large bowl, stir together dry ingredients: flour, sugar, baking powder, cinnamon and salt.
- In a medium bowl whisk together eggs and milk until fully combined.
- Add the egg mixture to the dry ingredients and whisk to fully combine. Scrape the sides and bottom of the bowl with a spatula.
- Add the chopped apples to the batter and stir to combine and fully coat the apples.
- Heat the oil in a deep-fryer or larger skillet to 375 degrees F.
- Using a small ice cream scoop, drop batter into the hot oil. Don't make them too large. They will expand and you risk having the outside cooked while the middle is still raw.
- Fry until golden on both sides, about 5 minutes depending on the size of the fritter.
- Fry the fritters in batches using two forks or chopsticks to move and turn them. Watch carefully to avoid burning or overcooking on one side more than the other.
- Once fried, remove from the hot oil using a slotted spoon or two forks and place on paper towels to drain excess oil.
- If you decide to toss them in cinnamon sugar, do that while the fritters are still warm.
