Ingredients
The following ingredients have 5 Servings
- 1 cup diced pork tenderloin
- 4 cups cooked rice
- 2 beaten eggs
- 2 green onions (chopped)
- 2 Tbsp. soy sauce
- 1/2 tsp. salt
- 2 1/2 Tbsp. oil (I use canola)
Instruction
- Heat 1/2 Tbsp. of oil in a wok heated to about 375ºF (or use a pan over the stovetop). Cook diced pork tenderloin until browned and cooked through. Set aside in a bowl. (I've also used leftover pork, diced up and just heated in pan for a minute or two.)
- Heat another 1/2 Tbsp. of oil in wok and scramble the beaten eggs. Pour into bowl with cooked diced pork.
- Pour about 1 1/2 Tbsp. of oil into wok and pour in the cooked rice, breaking up big pieces until heated through.
- When heated through, add green onions and cook for a minute.
- Add in soy sauce, pork and scrambled eggs. Stir to cover the rice with soy sauce. Add salt and stir until all heated through.
- Serve and enjoy!
